Super Oktoberfest Cream Puff

Shell:
2 1/2 cups milk
1/4 pound shortening
2/3 pound all-purpose flour
7-8 eggs
Pinch of salt
Nutmeg to taste
Combine: Milk, shortening, nutmeg, salt in a pot. Bring to a boil adding flour slowly. Beat solidly with whisk until it binds. Add eggs one at a time until correct consistency is reached. Pipe mixture in 2" circles onto baking sheet. Lightly mist with water. Strike pan hard against table to flatten circles. Bake at 470ºF for 30-40 minutes until medium-brown. Do not check too often; inconsistent temperature will collapse shells.
Filling:
1-2 quarts of whipping cream
Sugar
Whip cream at high speed until it stiffens. Add sugar to taste. Fill shells.
Optional: sprinkle with powdered sugar.
